Gourmet Fine Catering’s Argentinean Short Ribs

To make our Gourmet Argentinean you will need to start by making the Braising liquid which in this case will be Green Chilli.
Ingredients you will need:
- 2 Diced Yellow Onions
- 1 T Diced Garlic
- 1 Diced Red Pepper
- 1 Diced Green Pepper
- 1 Diced Pablano Pepper
- 3 Shots of Tequila (your preference on type of tequila)
- 1 Can or Bottle of Mexican Beer
- 1 T Flour
- 1 Qt of Green Chilies (your preference of hatch chilies or canned chilies)
- 1 T Mexican Oregano
- 7 Diced Roma Tomatoes
- Salt
- Pepper
- 1 tsp Vegetable Oil
Method:
If you would prefer to have pork green chili add ½ Lb cubed pork shoulder or pork sirloin and add 1 cup of pork stock. You would add these ingredients in the pan after you have added the remainder of the ingredients. If you choose to make pork green chili you will need to simmer for 1 hour instead of 30 minutes.
Now for the Short Rib Rub
Ingredients:
- 1 T Mexican Oregano
- 1 T Paparika
- 1 tsp Salt
- 1 tsp Onion Powder
- 1 tsp Toasted Cumin
- 1 tsp Chimayo Powder
- 1 pinch of Cinnamon
- 1 T Achiote
- 4 Short Ribs
Method:
Mix all of your dry ingredients until combined well and rub your short ribs with the mixture. Once your Short ribs are completely covered get a skillet really hot and add a tsp of vegetable oil. Sear all sides of your short ribs until browned.
With a roasting pan add 2 bottles or cans of Mexican beer of your choice to your green chili. Place the short ribs in the pan. Place in the oven at 200° overnight for 9-12 hours. The short ribs will be tender and easy to cut with a fork.

Finca Sophenia Malbec Reserve 2007
The Winery-Roberto Luka, inspirer and the main shareholder of Finca Sophenia, holds a recognized background in the wine world. He was managing director of one of the main wine exporter companies of his country and president of Wines of Argentina. In 1997, he founded Finca Sophenia together with Gustavo Benvenuto. The winery is named after his daughters, Sophia and Eugenia. The prestigious winemaker Michel Rolland has collaborated as consultant with Finca Sophenia since the first vinification took place.
The Region-The land selected to plant the first vines in 1997 is located at the slopes of the Andes Mountains in the famous district of Tupungato, Mendoza, where the best quality wines are made. The terroir benefits from the cooler climate at the elevation of four thousand feet, where the sun is abundant and sharp contrast between the day and night temperatures help nurture the grapes. The area encompasses an ideal microclimate for the slow ripening of fruits, which allows the wine to find its utmost expression. The soil is sandy and rocky with excellent drainage. The vineyards were planted with select French clones, which were grafted onto American rootstock.
The wine-After a great growing season, the grapes were hand-harvested and sorted and then pressed. The juice was gravity fed into stainless steel vats and was cooled to extract the finest aromas and flavors during maceration. The juice was then fermented using French yeast at a controlled temperature, followed by a post-fermentation maceration. The wine was then barreled and aged for a year in French oak.
Tasting Profile-In the glass the wine is an intense deep red color with violet hues, offering complex aromas of plums and ripe cherries and violets. It is enhanced by the presence of dry fruits and a hint of mint. This Malbec is a wine of great complexity and concentration, showing nice tannic strength.
