A Tasty Marinade!

Perfect for London Broil, chicken breast, or tofu!

Bridal Veil Marinade

2 c. Freshies Original Bloody Mary Mix
1 c. Freshies Fresh Lime Margarita Mix
¼ c. Red Wine Vinegar
¼ c. Soy Sauce
1 T. Fresh Ginger, minced
Mix ingredients in Tupperware container. Shake until completely blended. Aerate your food by poking with a fork. Place meat in Tupperware, shake for one minute, and marinate overnight. When ready, place on grill and sear lightly. Mix left-over liquid into half-boiled rice. Simmer until rice is tender or liquid is boiled off. Serve meat and rice together.

Spanish Chorizo Stuffed Prawns wrapped in Serrano Ha, with a Cassabel and Manchego cream.

Spanish Chorizo Stuffed Prawns wrapped in Serrano Ha, with a Cassabel and Manchego cream.
 
Ingredients:
 
Prawns  (6 U-15)
Spanish Chorizo 1 pound small diced.
Serrano Ham Deli sliced thin ½ pound
 
Take the chorizo and cut into small dice and sauté lightly for 2 to 3 minuets and let cool.
Peel and de-vein shrimp and butterfly down the middle of shrimp and stuff shrimp with cooled chorizo and then wrap with the thinly sliced Serrano ham (or any spicy Spanish ham) and pan sear on both sides till brown. In a sauté pan with pad of butter bake the shrimp at 375 for 3/1/2 to 5 min. 
 
Sauce:
 
Cassabel peppers (smoked cherry peppers) 5
Garlic 1 T
Minced shallots 3T
¼ cup high quality Spanish sherry
½ cup heavy cream
½ cup Manchego cheese
 
 In a hot pan with a thin coat of oil sauté the garlic and shallots in the pan till browned then deglaze the pan with Sherry and reduce by a ¼   then add heavy cream and simmer for 5 min on low stirring often then slowly add the shredded manchego and simmer till thick.
 
Plate prawns and drizzle with cream also a nice touch for garnishing the plate is to hold back some of the oil from the chorizo and paint the plate with it.

Wine:

Casa Do Valle Vinho Verde is a family owned and operated winery and estate from Portugal.  They are only one of about 3 operators of this type in the area.  All the other producers of Vihno Verde are produced by Cooperatives.  Verde, meaning green in Spanish, is actually named so because the wine is young and meant to be drunk very young.  It is grown in a fabulously, lush, green region, right across the border from Spain, in which they actually have to divert the abundance of water.  Vihno Verde can be made of about 25 different grapes, but the Casa Do Valle is made from all Albarino.  It has a delicious peach/apricot nuance in the nose, but is citrussy, crisp and light with a hint of effervescence on the finish.   It is a wonderful pair to this month’s recipe, with enough acid to cut through this rich sauce and shrimp and enough citrus to compliment the salty ham and melon to tone down the spicy chorizo.  This is a deliciously refreshing wine meant to drink during the hot summer months and can be found at Joy Wine and Spirits, 1302 E. 6th Avenue.  Discover the JOY of wine.
