Mediterranean Feta Tapenade
2-cups Calamata olives
1.5-cups chopped fresh Roma tomatoes
1-cup Spanish imported olives
1-teaspoon fresh lemon juice and zest
2-tablespoons capers
3-green onions finely diced
1-teaspoon agave juice
2-tablespoons fresh basil chiffonade (thinly sliced)
2-tablespoons fresh minced oregano
1-teaspoon freshly diced tarragon
1-tablespoon minced roasted garlic
3 tablespoons extra virgin olive oil
1.5 cups of crumbled imported Feta cheese
In Food processor combine all ingredients except Feta and process till desired consistency; then stir in Feta by hand; adjust flavor as desired with sea salt and cracked black pepper.
Serve with your favorite lightly toasted rustic Italian or Spanish breads for dipping.
