Eats & Beats: 30Forth Kitchen Debuts Signature Chipotle BBQ Sauce

Chef Francisco Quintana and Monica Ruiz have been bringing the seasoning of the East Side of Denver and spice of Mexico together through 30Forth Kitchen, setting the tables at corporate & private events around Colorado for over 4 years. 

Chef Francisco Quintana: The community that I grew up in, 30Forth comes from, you know, 34th Avenue. It's funny, Thanksgiving four years ago is when she pushed the button that was like, why aren't you doing this for yourself? Let's set out, you know, and so when we were cramming the name together and thinking of a brand, 30Forth was just the one, F-O-R-T-H is an intentional thing because it's a new beginning. It's starting something that it's a journey that we both agreed to go on together. And through everything that's going on in this world right now, we're blessed that we saw four years, and we're going on our fifth year in July.

They bring intentionality to every dish, carefully combining different flavors and textures into complex culinary creations with a presentation that is always top notch. From locally sourcing ingredients through fellow vendors, farms, and artisans to curating specific plates to the tastes of not only their upbringings but to the palettes of the people they serve, community is everything to this kitchen that pays tribute to our city.

Chef Francisco Quintana: When you grow up around the corner from Daddy Bruce, the BBQ Shack, Caro’s Burger, you know, go to Downing Super, they've got fresh cut meat and the Carniceria section, like, there was a lot of soul involved in the food, and community.

This year at KUVO's Live at the Vineyards they walked away First Place again at our People's Choice Winners, now TWO Years running 

Chef Francisco Quintana: We curated the shrimp and chorizo bite that we won for with the music. So, once we heard that it was kind of a Spanish influence, we immediately thought tapas, and that's where the shrimp and chorizo crisp was born. It's an overall experience, you know, so people eat with their eyes, that's where it begins: the way it looks, tastes, all that stuff influences the overall bite. And then when you accompany the music with it, that's just every sense that you have, and so it was very key for us to bring the music influence into it, being at the vineyards.

Their latest achievement is a brand new signature Chipotle BBQ sauce.

Chef Francisco Quintana: We just started bottling it in August. Right now, we're kind of limited in the stores that we're at, but we're working the street trying to get that out there more. We start with our ketchup base, Chipotle Chili's. We use a jalapeno jelly from Hacienda Maize. We’ve got a few others that we want to come out with, like dressings and things like that. But this was the baby, to kind of learn the ropes of how to bottle it, how to get it in stores. Just start with one, one bite. And then once we get it figured out, that's when we'll kind of launch the rest.
