This morning, Chef Blaine Baggao stopped by the KUVO studios to catch us up on all things ADOBO. We last saw ADOBO this summer at KUVO’s signature fundraising event Live at the Vineyards, where they were voted 2nd place in The Peoples Award for favorite restaurants at LATV this year.

ADOBO had it’s beginnings as a food truck back in 2017 and quickly made waves. Since then, ADOBO has continued to receive accolades. Now one year at their location at 31st and Federal, he is looking forward to new developments in the near future including the addition of Breakfast and Late-Night hours. He even brought a few selections from their new breakfast menu dropping later today 10/18/23, like Blue Corn Breakfast Tacos, Breakfast Burritos, and Smoked Pork Belly Breakfast Sandwiches. This West Highlands staple fuses Chef Baggao’s Filipino heritage with his New Mexico Roots. When asked why he think his tacos stand out Blaine said “I think people just appreciates the crossroads that we operate. That’s what I love about Denver – They are just so open to loving everybody.. who you are and what you represent.” On Eats & Beats we found out what’s on tap for ADOBO.
