I met Mag Castillo, a talented Denver musician/producer and lover of all kinds of music, in the elevator at the Beull Public Media Center. Under the stage name RevoPsyk, he releases music that blends Mexican Indigenous instrumentation with modern sounds and beats. In our conversations, I found out he also has a catering restaurant called The Bomb Enchilada.
The Bomb Enchilada began in November of 2019. They provide catering and private chef services to events and weddings in Colorado – Denver and beyond. With a focus on healthy and delicious Mexican cuisine, they use fresh ingredients and traditional cooking methods to create nutritious and authentic dishes. The Bomb Enchilada also offers meal prep services and are happy to cater to any dietary needs or preferences by providing gluten-free, dairy-free and vegan options.
On Eats & Beats, Mag and his brother Moi joined us to talk about his goal of giving the enchilada some main-course respect. He brought some of his red and green chicken enchiladas to The Morning Set to try. The homemade Cilantro Tomatillo Salsa and Pineapple Habanero Salsa were on point, the enchiladas were stand-out and flavorful, and that cheese pull was glorious. There is no lie in the name, his enchiladas were BOMB. We had a lot of fun digging into his love for the enchilada, his inspiration for cooking, and of course we touched base on his music.
