A few weeks ago, Steve Chavis and I took a trip to visit a KUVO Listener who goes by the name of Bacon. He got his start cooking and serving food for concert go-ers of bands touring on the east coast. Bacon has since bought a trailer and settled down in the rocky mountain town of Lyons, CO. His food trailer is called Magic Bus Catering and he specializes in gourmet grilled cheese. His motto is “bacon in every bite” – though he says he will happily hold the bacon if needed.

On a beautiful spring day, we made the journey to visit his location outside of Spirit Hound Distillers, a local and international favorite having just won an award for their whiskey. Magic Bus Catering sits on the corner of the lot, well-rooted. Right outside his window, there were several pots with flowers and his hand-written menu showcasing the fan favorites. This week on Eats & Beats, we feature a recollection of the conversations had with Bacon as he shared the story behind his dream – to cook food for the community.
