Trompeau Bakery and Café is a Denver staple known for its exceptional selection of mouthwatering croissants, sandwiches, and desserts. Pastry chef Pascal Trompeau, a native of Limoges, France, opened up the bakery in 2001 near the DU Campus on Evans Avenue in Denver, Colorado. Due to growing popularity, the bakery outgrew its original location and moved to its current South Broadway location in 2011. Current Owner Beth Ginsberg bought the bakery in 2019 and has maintained the same loved flavors and techniques that make this French bakery so authentic.

Trompeau Bakery and Café has been busy putting the final touches on their new location “Café Croissant” located at 934 16th St Mall in Denver. With a grand opening date of Monday, January 29th, I stopped by the bakery and met with Beth to find out what’s in store for this new downtown bakery.
